It’s a thing. At least, we want to help make it a thing. We get asked a LOT of questions from Ooni owners about how to bake sourdough pizza and bread, so we’ll start with the basics.

Step one: Get your own sourdough culture – whether you make one from scratch (it’s actually pretty easy) or pick it up from a local bakery. Either way, if you’re keen to start working with sourdough recipes, knowing how to make and maintain a sourdough starter is a must.

Here's the rough lowdown: All you need is all-purpose flour and some water. After the initial ferment, you’ll grow your starter by feeding it, and by day 3, your starter mixture should be ready for action. Pinch off a portion of your starter and feed it with a dash of flour, then discard any leftover mixture. Follow this same process, discarding and feeding every 24 hours, for the next two days. By then, your sourdough starter should be healthy enough to start using.
